Chocolate Shortbread with Pistachios

This week Bake Of The Week is Chocolate Shortbread with Pistachios.

I actually tried baking it yesterday but then made some mistake - the recipe calls for 113g unsalted butter while I accidentally creamed the whole 250g of butter. Bah!

So today I bake it again and taadaa......successful! A nice, round chocolate shortbread with Hershey's chocolate glaze top sprinkled with coarsely chopped slightly roasted Pistachios.

I do not own a tart pan, so I used a pie pan instead. Worked fine anyway.

This is rather a rich recipe so a small slice will do for desert. And if you are a chocolate fan, you will love it as much as the Tan family loves it.

And I highly recommend using Hershey's brand semi-sweet chocolate for the chocolate glaze.
