Lunch for 2

Today's lunch is just me & hubby (Shern has his usual moi of course). Since both of us were not that hungry, I decided to do something light for lunch.

Was thinking of a recipe to use up the fish fillet. Knowing hubby likes fried stuff, I decided to make some deep fried fish fillet for lunch. Found an easy recipe online & I just deep-fried away. Served the fish fillet with tartar sauce.


Made a side - mixed fruit salad. Cubed green apples, quartered grapes, cubes tomatoes.




Hubby said it tasted good.
Great lunch for 2.


Recipe: Black Pepper Deep Fry Fish Batter Recipe (modified from Fish Batter Recipes)

* 1 tbsp. vinegar
* 1/2 cup water
* 1/2 cup lowfat milk
* 1 cup all-purpose flour
* 1 tbsp. baking pwdr
* 1/4 teaspoon salt
* Fish fillets, thawed

* Black Pepper

1. Combine first 6 ingredients, beat till smooth.
2. Dip fish in batter.
3. Sprinkle some black pepper.
4. Fry in deep fat till golden, turning once.
