At last the bananas which I had kept for almost a week are now ripe! So i went ahead to bake some banana muffins. Modified the recipe and threw in a handful of yoghurt raisins instead of white chocolates.
Look at my batter - made up mostly on mashed bananas, flour and raisins.
Scooped them and spooned the batter into the muffin pan lined with paper liners.
I placed a slice of banana on top of each muffin as garnishing.
Hey presto! This is the result after 25 minutes of baking in the oven. Nicely kembang muffins!
Final product....Banana and Raisins Muffins!
Some of them are a little brown. It LOOKS burnt, but it doesn't taste burnt...luckily!
I need to improve on the looks the next time!
Anyway, fyi, I purposely did NOT mashed the bananas until very smooth because I like to be able to taste the banana bits when I bite into the muffins.
The muffins now oozes of banana bits and taste lovely! :D
